1 Can 15 oz Crushed tomatoes
1 can chopped tomatoes with green chilis, hot or mild
1 QT chicken stock (or vegetable stock)
1 can black beans, rinsed
1 can garbanzo beans, rinsed
1 can golden hominy, drained
1 cup hashbrown potatoes (or 1 small potato, sliced)
Serve over any carbs, rice, diced and roasted potatoes, quinoa, couscous, orzo or any other noodles.

Posole is Mexican Stew. You can substitute whatever meat you choose but chicken is a GREAT option!

1 small chopped onion
2 cloves garlic
1 lb chopped cooked chicken
2 cloves garlic
1 lb chopped cooked chicken
1 tsp. chili power
2 tsp. cumin
You just dump it all in a stock pot or crock pot. Simmer for 2 hours in stock pot. In crockpot, cook for 8 hours low/4 hours high.
